Pepparkakor (Gingerbread)
1 stick butter
½ c. brown sugar
½ c. sugar
2 large eggs
1/8 t. salt
1 t. cinnamon
½ t. ground cloves
½ t. nutmeg
1 t. ginger
1 t. cardamom
2-2 ½ c. flour
Cream butter and sugars; add eggs and spices.
Gradually add as much flour as you can until the mixer clogs. Vigorously knead
in more flour to make a very stiff dough. Wrap airtight and refrigerate at
least 24 hours. Roll chilled dough very thin, cut into shapes and arrange on a
greased and floured baking sheet. Bake 350°F
12-18 min. until edges are barely beginning to color.
