Lena’s White Bread Lena Schenström

1 c warm water
1 c flour
2 oz fresh yeast
4 1/3 c warm water
1/4 c oil
2 T salt
4 1/2 oz cottage cheese
17 3/4 c flour

Mix first 3 ingredients and let rise for 20 minutes.  Mix in remaining ingredients.  Place the dough on a greased cookie sheet/cake roll pan.  Let rise 1.25-1.5 hours.  Bake in the middle of the oven 575°F for 10 minutes.  Reduce the temperature to 390°F and bake another 50 minutes.
