Fisk Schenström family recipe
Put cut up pieces of frozen fish (cod) in the
bottom of a buttered pan. Salt. Slice tomatoes and onions on top. Make
an extremely thick white sauce: 2-3 T. butter or margarine, as much
flour as can be mixed in, milk to make an extremely thick sauce, salt
and pepper. Pour sauce over fish and sprinkle with grated cheese such
as WI non-aged Swiss and bread crumbs. Bake approximately 45 min. at
350°F.
Vegetarian option: Slice 1 lb. of
extra firm (not silken) tofu into half inch thick slices, lightly salt
to draw out water. Deep fry or fry in a half inch of oil, until golden
brown. Drain on a paper towel. When cool, puncture repeatedly with a
fork or sharp skewer and drizzle with lemon juice. Substitute in recipe
for the fish.
